Blueberry Bread Pudding


4 large Omega-3 eggs
1/4 C maple syrup
3/4 C organic milk of choice
1 tsp cinnamon
pinch cardamom
1/2 tsp vanilla extract
1/2 C plain Greek Yogurt
4 slices hearty whole grain bread
2 C fresh blueberries, or sub frozen
1 tsp coconut sugar
1/3 C walnuts for garnish
11/2 C plain Greek yogurt for garnish


  1. In a large mixing bowl, beat eggs, maple syrup, milk cinnamon, cardamom, vanilla extract, and Greek Yogurt.
  2. Tear bread into chunks and stir gently into egg mixture. Pour into a lightly greased 8″x8″ baking dish and allow
    to sit at least 30 minutes or overnight in the refrigerator.
  3. Preheat oven to 350 F. Just before baking, top bread mixture with the blueberries, then sprinkle with coconut
    sugar for an added crunch. Bake for 40 min or until the center has risen and a tester comes out clean.
  4. To serve, portion an amount onto a plate and top with lightly roasted walnuts and 1/4 cup Greek yogurt.
